You've probably seen freeze-dried fruit on supermarket shelves or in health food stores — but what actually is freeze drying, and why does it produce such a different result to regular dried fruit? Here's a simple explanation.

What Is Freeze Drying?

Freeze drying (also called lyophilisation) is a preservation process that removes moisture from food in two stages. First, the fruit is frozen solid. Then, it's placed in a vacuum chamber where the frozen water converts directly from ice to vapour — skipping the liquid stage entirely. The result is a piece of fruit that has lost almost all its moisture but kept its original shape, colour, flavour, and nutritional profile.

How Is It Different from Regular Drying or Dehydrating?

Traditional drying uses heat to evaporate moisture. This works, but the heat degrades vitamins, changes the colour, and alters the flavour. It also leaves the fruit chewy and sticky because some moisture remains.

Freeze drying uses no heat — so the fruit retains far more of its original nutrition, colour, and flavour. The texture is completely different too: light, airy, and crunchy rather than chewy.

Why Does It Matter?

  • Better nutrition — vitamins and antioxidants are largely preserved
  • Intense flavour — the natural sugars and aromatics are concentrated
  • Longer shelf life — without moisture, bacteria can't grow
