They’re here! Our freeze-dried strawberries are now available online, and they’ve been selling out at our Saturday and Sunday markets.
These strawberries are grown locally, just ten minutes from us. We don’t grow them ourselves; when they’re picked, we head over to collect them, then I get straight into processing them and loading the freeze dryer. Super fresh, super tasty, and such a lovely burst of strawberry flavour!
Once freeze dried, they’re so light they’d practically blow away in the breeze.
Here’s a little behind-the-scenes number for you: around 10kg of strawberries goes in, and about 32 hours later we have roughly 1kg of freeze-dried fruit. That’s a lot of water coming out!
Watch the strawberry video and look at the ice collected on the side of the drum. One curious detail: when it defrosts, the water doesn’t taste like strawberries!
Keep an eye on the quantities available online and order while there’s stock. These little beauties aren’t hanging around for long.
